In this episode we chat with Jordan White from Big Trouble BBQ in Windsor, California. Jordan has a crazy passion for BBQ and love to share his tips and Ideals with others because so many have helped him on his BBQ journey. A friend gave him a turkey recipe and he has been hooked to Smoking meats every since.

He loves to cook on Weber products and loves them.I believe his new Weber Summit is by far his favorite. He really likes to entertain guest and share his food with friends and family.

Jordan’s Famous Rub And Injection

PORK RUB

1/2 Cup Brown Sugar (or half white / half brown depending on color you’re after)

1/4 Cup Paprika (not Smoked)

1 Tablespoon Coarse Ground Pepper

1 Tablespoon Kosher Salt

1 Tablespoon Chili Powder

1 Tablespoon Onion Powder

2 Teaspoon Cayenne Pepper

*Whisk all ingredients together.

Makes enough for 3-4 racks or 2-3 butts.

Brisket injection

2 Cups Beef Broth

 1/4 Cup Worcestershire Sauce

 1 Tablespoon Apple Cider Vinegar

 1 Tablespoon Lemon Juice

 1 Teaspoon Tabasco Hot Sauce

 1 Teaspoon Kosher Salt

 1 Teaspoon Onion Powder

 1 Teaspoon Garlic Powder

 *Combine all in sauce pan, bring to boil. Let cool, refrigerate until cold before injecting.

 Makes enough for 1 large brisket.
