In the episode we talk with Willian Scheffler from Billys BBQ Shack. I found Billy on FaceBook and had to invite him on for a interview. I truly love his passion for this BBQ.

Billys Brine
Brine for chicken or Pork
Brines 6 to 8 Chickens
Ingredients
1 LG Onion Quartered
8 Garlic Cloves
1 cup Smoked Salt
1 cup Sugar
1 cup Brown Sugar
2 tbsp Billys Chicken and Pork Rub
2 tbsp Cider Vinegar
Instructions
- Quarter Onion
- In 4 quart pot add all ingredients
- Cover in water put on stove
- Bring to a boil
- Simmer 5 min
- Add ice in 2 gal bucket
- Pour mixture over ice
- When cool add chicken put in fridge over night
Billys Asian BBQ Sauce
Ingredients
1/2 cup Hoisin Sauce
1/2 cup Ketchup
1/2 cup Sake
1/4 cup Teriyaki
4 tbsp Thai Hot Sauce Sriracha Rooster
1 tbsp Rice Vinegar
2 tsp Minced Ginger
1 clove Minced Garlic
1 tsp Five Spice Power
Instructions
- Combine ingredients in a saucepan
- Bring slowly to a boil over med heat
- Reduce to simmer until sauce thickens About 5 mins
- Put in jars good for 2 to 3 months
