In this episode we chat with Arnie Segovia from Smokin Lonestar in Texas. This guy loves to cook and compete in BBQ comps. He also really loves to teach and share in knowledge with all who gives him the opportunity. I really enjoyed having him on the show and hope you enjoy this episode. Merry Christmas very one and I hope Santa brings you everything you want.

Chef Toms Leftover Turkey Sandwich Recipe

Hey Guys here is a gift rub recipe From Arnie Segovia

This is a basic rub that we use in Texas, it’s great all around rub that lets the meat shine on it’s own or can be used as a base then followed by something sweeter for pork or chicken.

1 1/2 Cup Coarse Kosher salt

1 Cup course pepper, ( I like the Tones restaurant style from Sams Club)

2 tbs granulated garlic (not powder or salted)

2 tbs granulated onion (not powder or salted)

1 tbs New Mexico chili powder (not a blended chili powder but could work too)

1 tbs Paprika (Hungarian is my preference)

2 tsp Cumin

Optional:

2 tbs cayenne pepper if you like a little pop in there

Optional for pork ribs:

Add;

1/4 cup Turbinado sugar

Mix it up really well and enjoy on any meats.

BTW this is a really great sauce blend that I use in catering and is always a crowd favorite

2 cups Head country Original

1 cup Stubbs Spicy

1/4 cup of honey

pure awesomness

 Thanks for listening
